Kingston Black, with its natural balance of fruit, tannin, acid and sugars, is one of the few apples that can truly succeed as a single variety cider. To showcase the variety to its fullest the fruit was pressed into stainless steel tanks and fermented naturally, before further racking to steel for the 'elevage' of the cider, to transform it into something special. Prior to bottling the cider was fined with the addition of highly tannic perry, an ancient technique developed in the Mostviertal, Austria. Sweet blossom, apple pie and icing sugar aromas move onto quite concentrated flavours of honey, peach, dried apple, vanilla and fruit cake spice. Bridgewell is the name of our small ‘mother’ orchard of new varieties, planted ten years ago. A number of new apple varieties that we now adore grow there – Northwood, Improved Lambrook Pippin, Gloucestershire Underleaf, Porter’s Perfection – alongside old favourites, such as Chisel Jersey and Bulmers Norman. This cider is a juicy, smooth blend of them all – driven by delicious green apple acidity, the flavour is long, smooth and satisfying. Best enjoyed with green beans, goats cheese, or prosciutto.

Ten Years Gone #4 is an 8% West Coast double IPA brewed with a duo of California breweries: Long Beach’s Trademark Brewing and San Diego’s OB Brewery. Naturally, in uniting these California hop maestros, we chose to make a classic West Coast IPA. And because it’s a big anniversary, we made it a big one. The 8% brew is constructed from a mix of Crisp Malting barleys: a majority of the UK maltster’s exceptionally pale Hana Malt, a minority of its richer Maris Otter. At Trademark’s suggestion, we first wort hopped with Simcoe for a little extra structure. Then we reintroduced Simcoe during the boil and again at whirlpool, where it was joined by some Citra Cryo. When it came time to dry hop, we got into our bags of Amarillo, Champlain Valley Centennial, and — what do you know — more Simcoe. - 8%

First, we did it Just Like That. Now, we’re gonna do it Just Like This. Just Like This is a new 6.7% IPA that revisits the hop combination of Just Like That, one of our favorite IPAs from last year. But whereas That had a distinctly cloudy complexion, This is a clearer West Coast IPA. We’ve tweaked the recipe a little to make Just Like This suitable to the San Diego style — namely, swapping out any adjuncts for a grist that’s pretty much all pale barleys. Hopping started with a few rounds of Almighty Citra in the kettle. The whirlpool was a Riwaka party. For us, though, this series is mainly about the dry hop and showcasing Alora there. A newer PNW varietal from @Hopsteiner, Alora is big on yuzu, ripe melon, and peach. And it plays well with others, so we added more Riwaka and more Citra to the mix. The word alora translates to “dreamlike” in Latin, and that’s sounding about right now at the moment

As we continue down the well-beaten path created by those west coast brewers from the earlier 2000’s, we’ve found ourselves willing to trial out just a touch of crystal malt, even after so much of our previous willingness to whine and complain about its use. Opinions and attitudes, despite just how entrenched they might be, can and do change. The focus of such a departure in recipe formulation is in search of an additional depth of malt character that would complement our dryer American Ale yeast fermentation alongside the chosen varietals of Citra, Nelson, and Centennial. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen.
3 Fonteinen - Golden Doesjel '19/'20 • 375ml
Blend of 1-, 2- 3- and 4-year old lambic - 4-year old component at least 25% of the belend -, all fermented and lagered in oak barrels and vessels. With Doesjel, the wild fermentation of the young lambic did not continue throughout the bottle conditioning as the yeast "dozed in" ("ingedoesjeld").

Hommage is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. - 6%

With Bottled Blonde, our collaboration with alt-rock gods Momma, we sought to make a beer for warm summer evenings and sus decision-making. At 4.8%, it won’t immediately get anyone into trouble... but this quenching crusher may keep you reaching for another. We constructed the lager from a mix of premium Weyermann grains – mostly their floor-malted Bohemian Pilsner Malt – and flaked corn, which lightens the grist while imparting a kiss of malt sweetness. It’s a pristine beverage – a fitting nod, in our mind, to bassist/soundsmith Aron Kobayashi Ritch’s polished production on Momma’s fourth LP. Ocelot - '4' 10th Anniversary West Coast Double IPA • 4pk-16oz Cans
Ten Years Gone #4 is an 8% West Coast double IPA brewed with a duo of California breweries: Long Beach’s Trademark Brewing and San Diego’s OB Brewery. Naturally, in uniting these California hop maestros, we chose to make a classic West Coast IPA. And because it’s a big anniversary, we made it a big one. The 8% brew is constructed from a mix of Crisp Malting barleys: a majority of the UK maltster’s exceptionally pale Hana Malt, a minority of its richer Maris Otter. At Trademark’s suggestion, we first wort hopped with Simcoe for a little extra structure. Then we reintroduced Simcoe during the boil and again at whirlpool, where it was joined by some Citra Cryo. When it came time to dry hop, we got into our bags of Amarillo, Champlain Valley Centennial, and — what do you know — more Simcoe. - 8%
Ocelot - Just Like This West Coast IPA • 4pk-16oz Cans
First, we did it Just Like That. Now, we’re gonna do it Just Like This. Just Like This is a new 6.7% IPA that revisits the hop combination of Just Like That, one of our favorite IPAs from last year. But whereas That had a distinctly cloudy complexion, This is a clearer West Coast IPA. We’ve tweaked the recipe a little to make Just Like This suitable to the San Diego style — namely, swapping out any adjuncts for a grist that’s pretty much all pale barleys. Hopping started with a few rounds of Almighty Citra in the kettle. The whirlpool was a Riwaka party. For us, though, this series is mainly about the dry hop and showcasing Alora there. A newer PNW varietal from @Hopsteiner, Alora is big on yuzu, ripe melon, and peach. And it plays well with others, so we added more Riwaka and more Citra to the mix. The word alora translates to “dreamlike” in Latin, and that’s sounding about right now at the moment

As we continue down the well-beaten path created by those west coast brewers from the earlier 2000’s, we’ve found ourselves willing to trial out just a touch of crystal malt, even after so much of our previous willingness to whine and complain about its use. Opinions and attitudes, despite just how entrenched they might be, can and do change. The focus of such a departure in recipe formulation is in search of an additional depth of malt character that would complement our dryer American Ale yeast fermentation alongside the chosen varietals of Citra, Nelson, and Centennial. The above efforts and carefully made decisions show up here as deep mango and papaya, freshly microplaned navel orange zest, delicate dank grassy white wine, grapefruit pith, and fleeting tones of underripe berry. -6%

For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen.
3 Fonteinen - Golden Doesjel '19/'20 • 375ml
Blend of 1-, 2- 3- and 4-year old lambic - 4-year old component at least 25% of the belend -, all fermented and lagered in oak barrels and vessels. With Doesjel, the wild fermentation of the young lambic did not continue throughout the bottle conditioning as the yeast "dozed in" ("ingedoesjeld").
3 Fonteinen - Hommage '19/'20 • 375ml
Hommage is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. - 6%

Oregon) and 1.1 tons of Albarino grapes (King’s River, California) were crushed and blended together in stainless steel. A spontaneous fermentation was initiated immediately via carbonic maceration, and remained active for 11 days. Grapes and berries were pressed gently on day 18 and the fermented juice was collected and aged in bulk on stainless until the flavors had softened and come together. 92 cases produced. - 9.5% This wine received no sulfur additions.

An unusual vermut that sees no fortification. Made from a blend of direct-press Cabernet Sauvignon and Sumoi. Once the co-fermentation was complete, the wine was transferred into unique 1200-liter chestnut wood barrels from 1917, obtained from the Santa Agnes estate in the Santes Creus area. A selection of local herbs and fruits, including rosemary, sage, citrus skins, lemon, thyme, and other plants from the Tarragones region were added to the barrel which imparts a complex flavour and aroma to the vermut.

Oregon) and 1.1 tons of Albarino grapes (King’s River, California) were crushed and blended together in stainless steel. A spontaneous fermentation was initiated immediately via carbonic maceration, and remained active for 11 days. Grapes and berries were pressed gently on day 18 and the fermented juice was collected and aged in bulk on stainless until the flavors had softened and come together. 92 cases produced. - 9.5% This wine received no sulfur additions.

Celler 9 - 1917 Vi Aromatitzat Vermouth • 750ml
An unusual vermut that sees no fortification. Made from a blend of direct-press Cabernet Sauvignon and Sumoi. Once the co-fermentation was complete, the wine was transferred into unique 1200-liter chestnut wood barrels from 1917, obtained from the Santa Agnes estate in the Santes Creus area. A selection of local herbs and fruits, including rosemary, sage, citrus skins, lemon, thyme, and other plants from the Tarragones region were added to the barrel which imparts a complex flavour and aroma to the vermut.

Jurancon is a sweet wine made in southwest France, using late-harvested grapes which have been allowed to shrivel on the vine. This bottling, a PM Spirits Pick, aged for 9 years in a used Calvados barrel – the traditional aging method for the spirit – before being moved for 3.5 more years to a cask that previously held Jurancon from Domaine Cauhape. Jurancon is a sweet wine made in southwest France, using late-harvested grapes which have been allowed to shrivel on the vine.
